Happy Saturday, friends! It's another beautiful, sunny one here in Boston...I'm soaking it all in now, because apparently we are supposed to get 6 inches of snow tonight!? I don't know about you all, but I'm ready for Spring :).

This weekend, I was thinking about what beauty insight or eco-product I could share with you. Instead, I decided to share with you my current go-to smoothie recipe.  Now hear me out - beauty and smoothies are related, I promise.  For me, how my skin looks outwardly is soooo intricately related to how I'm treating my INSIDES.  When I take the time to prepare nourishing, whole foods, I see and feel the differences in my skin.  And when my stomach acts up, I notice that I lose my overall glow.

Today, I wanted to share with you one of my favorite ways to get my greens in during the week (or let's be real, mostly on the weekend because I'm usually don't have the patience to deal with the blender before work).  Sometimes eating a lot of raw veggies is tough for me (mostly due to volume/FODMAP's).  BUT, I've noticed that when the blender does the work and pulverizes the veggies for me, I don't have the same stomach problems I would if I were to eat a bag of raw spinach (yikes)!


This recipe is by no means revolutionary, but simplicity is what I'm currently loving -- it's easy to throw together for a satisfying snack.  Which makes me more likely to make it!

My Inner-Glow Smoothie (makes two servings):

  • 1 C frozen strawberries
  • 1/2 C frozen rasperries
  • 1 frozen banana
  • 3 large handfuls of fresh spinach, or frozen depending what you have on hand
  • Trader Joe's Almond Milk
  • Optional spoonful of almond butter

If you add the peanut butter or almond butter, I find it gives this smoothie a peanut-butter jelly vibe and I'm into that lately.  The punch of spinach (vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron...the list goes ON), berries (vitamin C, sooo many antioxidants), and banana (potassium) makes my skin glow.

On a side note - my husband got a Vitamix through work (and I'm mooching off of him!) and it is a GAME CHANGER.  It gives the smoothest, creamiest smoothies.  I used to have a nutri-bullet and it is a totally different world with a Vitamix.
