What I ate today (typical day of eats!)

I don't know about you guys, but I'm kind of nosy and I LOVE to see what other people eat in a day.  I'll be perfectly honest - my daily eats aren't normally super exciting (I'm a creature of habit, what can I say), but I still wanted to give you a peak into a typical day of eating during the work-week.

The best part of these meals? Not a care in the world about calories/exercise for that day.  Just listening to my body -- eating when I'm hungry and stopping when I'm full.  So glad I've turned my mindset around in recent years. With that being said, let's get into it!   


BREAKFAST: One huge change I've made in the past year is eating breakfast at home before work. Today for breakfast I had two scrambled eggs (scrambled in Trader Joe's olive oil spray!) and two pieces of Udi's gluten free toast (which they actually recently changed and I can't stand this new kind. Boo!) topped with Earth Balance butter.  And always ketchup on my eggs. I also had my morning kombucha (Health-Ade Pink Lady Apple is AMAZING - you MUST try if you like kombucha!).


LUNCH: I typically pack my lunch during the week at work so that 1) I know my food doesn't have any FODMAP's that I know irritate my system and 2) so I can eat whatever I'm craving on the weekend. For lunch today, I had this barbacoa beef (which was SO good!) with quinoa and sweet potatoes, topped with my go-to tahini sauce for some more healthy fats to fill me up.  I also had some clementines on the side. 


SNACK: For a snack, I had a Whole Foods waffle with peanut butter, earth balance, and cinnamon.  And then I had another one (unpictured but just as yummy).  I did notice that my stomach didn't feel awesome after these, which reinforced why I stick to the 80/20 rule with gluten. But it was worth it this time!


As a side note, THIS is the best peanut butter in the whole wide world (what I topped my waffles with) - if you can buy this, DO IT! I find it at Whole Foods and Wegmans.


DINNER: For dinner, I had a big salad with spring mix, potatoes, broccoli and tahini sauce.  Some more toast on the side (I was really craving carbs today - yum).


SWEET TREAT: Dessert is basically always chocolate in my world. So for dessert, I had some Taza Salted Almond chocolate.  Sooooo good! I always need to have something sweet after dinner, whether it's fruit or the good stuff (chocolate).
